Ingredients

Buttermilk Pie Crust

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon Kosher salt
  • 1 cup (2 sticks) very cold unsalted butter, cut into small cubes
  • 1/3 cup cold buttermilk

Seasoned Chicken

  • 2 skinless chicken breasts (pounded to 3/4 inch thick)
  • 1 clove garlic, minced
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon chopped fresh thyme
  • Olive oil

Chicken Pot Pie Filling

  • 2 tablespoons unsalted butter
  • 1/3 cup diced yellow onions
  • 2 carrots, cubed
  • 1 stalk celery, cubed
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon chopped fresh thyme
  • 1/4 teaspoon chopped fresh rosemary
  • 1/4 cup chopped fresh parsley
  • 2 cups chicken broth, plus more as needed
  • 1/2 cup heavy cream
  • 1 cup frozen peas
  • 1 beaten egg (for egg wash)
  • 1 teaspoon heavy cream (for egg wash)

Instructions

Buttermilk Pie Crust

  1. Combine flour, sugar, and salt in a food processor by pulsing a few times. Add the butter cubes and pulse a few times until a pea-size coarse meal forms. Add the buttermilk and continue to run the food processor continuously for several seconds, or until a dough forms. At first, it will look like it it's not coming together, but you just gotta continue running the food processor for several seconds until it comes together.
  2. Transfer onto a non-floured clean surface. Press to form a dough. Divide the dough in half. Roll each half into balls and flatten into thick disks.
  3. Wrap each disk with plastic wrap and chill in the fridge for at least 1 hour or overnight. Before using, let it sit on the counter for 15 minutes.
