Ginger Soy Chicken Thighs- – Side these sweet and flavorful chicken thighs with brown rice for an easy, weeknight dinner!
I’ve mentioned it a couple (hundred? 😉 ) times that we are big chicken eaters. I usually buy a large quantity of boneless chicken breasts and use them for a whole variety of dinners. It’s versatile, healthy and when it’s one sale, much easier on my grocery budget.
While we do love those boneless chicken breasts, I do also buy drumsticks (my kids fave) and boneless chicken thighs.
Ginger Soy Chicken Thighs

Sweet and flavorful! Add a side of brown rice for an easy weeknight dinner.
2 lbs. boneless/skinless chicken thighs
1/2 cup brown sugar
1/2 cup low sodium soy sauce
2 TBSP rice vinegar
1 tsp ground ginger
2 tsp minced garlic
1 cup flour
2-3 TBSP canola oil
green onions, optional, for garnish
sesame seeds, optional, for garnish
Preheat oven to 375 degrees.
In a bowl, whisk together brown sugar, soy sauce, rice vinegar, ginger and minced garlic. Set aside.
In shallow dish, add in flour and black pepper.
Dredge each piece of chicken through flour and coat well.
In a large, oven safe skillet, heat canola oil.
When skillet is hot, add in flour-coated chicken pieces. Brown each side about 3-4 minutes. You aren't going to cook it throughout, just brown it. If you have several pieces of chicken, work in batches and be sure not to crowd the pan.
Once all chicken is browned, place all pieces back into skillet. Pour sauce mixture over the top of chicken.
Bake for 20-25 minutes or chicken is cooked thoroughly.
Sprinkle chicken with chopped green onions and sesame seeds before serving. Serve chicken with any sauce in skillet
Goes well with brown/white rice.
Cooking time may vary, due to the size/thickness of your chicken thighs.
