Are you a fan of Thai food? This Thai Sweet Chilli Chicken is simple to make, only has 470 calories and tastes delicious!
450 Grams of Chicken
1 Large Egg
45 Grams of Cornstarch
3 Tsp of Garlic
1 Tsp of Salt
Half a Lime
1 Tsp of Ginger
1 Large White Onion
1 Large Green Pepper
3 – 5 tsp of Soy Sauce
150 Grams of uncooked Wholegrain Rice
1. Firstly dice your chicken into small chunks. Sprinkle your garlic and salt on the chicken. Chop your half lime into 2 quarters. Squeeze quarter lime on top of chicken. Crack one large egg into a separate bowl. Beat egg until there is a consistent orange colour throughout. Once complete add egg into your bowl of chicken. Mix well until the seasoning and egg is covering all chicken pieces. Sprinkle your cornflour on and mix again until all chicken pieces are evenly covered.
2. Next, add your wholegrain rice to a pot of boiling water. Boil for 10 – 12 minutes or as the packaging instructs. bring a pan to a medium to high heat. Add your chicken pieces one by one making sure they do not touch on the pan. Do not move them. Allow them to fry for 2 – 3 minutes. Then turn them over and do the opposite side. This will allow the chicken to go golden and give that crispy layer. Do you not move around in the pan until both sides are golden. O
3. Once golden, add your onion and green pepper. Stir-fry for 4 – 5 minutes until the chicken is fully cooked. Add your Soy Sauce to the pan and sweet chilli chicken. Mix well until covered and hot. Once cooked, add rice, chicken and vegetables to a bowl. Squeeze your quarter Lime onto the dish. Additionally, you can add green onion and sesame seeds for extra taste as seen in the video.
