  • 3 tablespoons Olive Oil
  • 13 ounces Chicken Breasts , cut into chunks (a bit over ¾ pound/360 grams)
  • ½ Zucchini , cut into chunks (10 ounces/300 grams)
  • 1 Red Bell Pepper , cut into chunks
  • 1 cup Button Mushrooms , quartered (3.5 ounces/100 grams)
  • 1 Small Onion , diced
  • 10 ounces Pineapple Chunks in Juice, drained (300 grams), see note 5
  •  cup Raisins (50 grams)
  • 3 tablespoons Mild Curry Powder
  • 1 can Coconut Milk (13.5 ounces/400 ml)
  • 1 tbsp Fresh Ginger , grated
  • 1 tbsp Brown Sugar
  • 1 teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 3 teaspoons Corn Starch
